Ingredients
2 cups flour
3/4 cup sugar
1/2 cup brown sugar, packed
3/4 tsp baking soda
3/4 tsp salt
3/4 tsp cinnamon
1/2 cup non dairy milk
1 tsp apple cider vinegar
2 cups mashed banana, from about 4 large very ripe bananas
1/4 cup oil
2 Tbsp maple syrup
1 tsp vanilla
walnuts (optional)
Instructions
Preheat oven to 350. Lightly oil 9x5 loaf pan and set aside.
In a medium-sized bowl, sift together the flour, sugars, baking soda, salt and cinnamon.
In a large bowl, whisk together the milk and vinegar and let stand for 2 minutes. Add the mashed banana, oil, maple syrup and vanilla whisking until well combined. Add the dry ingredients to the wet, mixing until just combined (do not over-mix!). Fold in the walnuts and pour batter into the prepared loaf pan. Bake for about 1 hour, or until a toothpick inserted into the center comes out clean. Allow the bread to cool on a wire rack for 20 minutes before serving. Serve warm or at room temperature.
