1 cup pine nuts 1/4 cup nutritional yeast 1 bunch basil 4 cloves garlic 1/2 cup olive oil 1/2 lemon (juice) 2 avocados salt (to taste) 1 cup cherry tomatoes 1/2 cup sun dried tomatoes penne pasta (enough for 4 people)
Put the pinenuts, nutritional yeast, basil & garlic in the food processor & pulse Add the oil, lemon juice, avocados & salt into the food processor & blend to a paste Cook the pasta, put it in a bowl & add the avocado pesto Stir through Add the tomatoes & stir those through as well Serve immediately (with a side salad)
