Sweet Potato Casserole

Ingredients

4 large sweet potatoes, peeled and cooked
2 Tbsp vegan butter
1 tsp vanilla extract
5 Tbsp maple syrup
1/2 tsp sea salt
3/4 tsp nutmeg
3/4 tsp cinnamon

Topping:
1/4 cup vegan butter
1/2 cup brown sugar
1/3 cup flour
3/4 cup chopped pecans

Instructions

Preheat oven to 350. 
Lightly grease 2 quart casserole dish. 
Peel and boil sweet potatoes until tender. 
Mash with butter until smooth. 
Add the vanilla, maple syrup, sea salt, nutmeg and cinnamon. 
Pour into casserole dish. 
Mix the toppings together and sprinkle over the casserole. 
Bake for approximately 50 mins.
