Island Chicken and Coconut-Lime Rice

Ingredients

1	Can	coconut milk
1 1⁄2	Teaspoon	salt (divided between rice and chicken)
1 1⁄2	Cup	uncooked jasmine rice
1	Teaspoon	lime zest
3	Tablespoon	fresh lime juice (divided between rice and chicken)
cilantro or thai basil (optional)
1 pounds(s)	Boneless Chicken Breasts
1⁄2	Teaspoon	red pepper flakes
1	Tablespoon	Olive oil

Instructions

Coconut-Lime Rice:
Bring coconut milk, 1 tablespoon of salt, and two cups of water to a boil in a saucepan over medium heat. Stir in rice, cover, and reduce heat to low. Simmer 20-25 minutes, or until liquid is absorbed and rice is tender. Stir in lime zest and 1/2 of the lime juice. Garnish with cilantro or basil.

Island Chicken:
Marinate chicken breast in lime juice and red pepper flakes. Heat olive oil in a pan. Cook chicken breasts on one side for 10 minutes. Flip and cook through. Dice chicken breast and season with salt to taste. Add to Coconut-lime rice and enjoy!
